Which vegetables usually return the most grocery value per square foot?
Value depends on what you buy, what grows well, and whether you count infrastructure and time.
Value density is a ratio, not a crop ranking
Estimated grocery value per occupied square foot multiplies expected edible yield by an editable local price, then divides by the crop’s planning footprint. It is useful for comparing claims on a small bed.
The ratio can favor frequently purchased herbs, salad greens, trellised beans, cherry tomatoes, and other crops with high retail prices or repeated harvests. But a crop has no household value when nobody eats it.
Subtract the costs that change the decision
A raised bed, imported soil, irrigation, supports, seeds, seedlings, fertilizer, and water all belong somewhere in the model.
- Annualize durable setup over a realistic useful life.
- Keep annual inputs separate from one-time setup.
- Add labor only when savings is the decision you are testing.
- Do not assign savings to produce that would not have been purchased.
Optimize for the garden you will maintain
A theoretically valuable crop that repeatedly fails in your heat, disease pressure, or shade is not high value. Reliability and enjoyment belong in a balanced score.
A first garden should usually reserve space for easy crops and one or two high-value experiments rather than chase a spreadsheet maximum.
